It was Cheesy, well it was tofu substitute cheesy, and the gluten free noodles taste like regular ones. I think the spinach added alot to it.

in response to your post bizzeedee.. it does make alot of chicken salad....I am used to cooking for me and my husband and son. My son is 17 and must be having a growth spurt because I don't know how he can eat the amount of food he does...hes a little scrawny thing, I don't know where he puts it. He eats alot, though I am sure most teen boys have a similar appetite.. Plus we always have extra left over for lunches the next day...and I take out a small plateful of chicken for our dog before putting the other ingredients in.

When he was small and would eat a lot, we used to ask our son where he put it all and he said "My legs." So now you know.

For you gals with thin hog sons... here's a story. Step son moved in with us as a junior... couldn't believe the gallons of milk he drank and the food he consumed... I teased him that his dad was once as skinny (high school) but how things had changed.... flash forward 30 years, Tom has a weight problem, just like his dad ... guess what goes around comes around.
BUT, on a good note DH has lost over 30# since last July, not because he was trying but because of the gall bladder attack. He's totally changed his way of eating, either that or surgery! Today, he hit 200... he's excited, I'm excited, and we're waiting for the 199 day !

That's great that your husband is able to stick to his new lifestyle, Dee. And I know what everyone means about teenaged boys and food. I think they need it while they're growing, but then once they stop growing they've gotten into the habit of eating huge amounts. It's hard to learn to cut the portion sizes back down. Zaven is learning it a little at a time. He's lost 2 lbs. every week for the last 3 weeks and I'm happy for him. Losing it slowly is a sign to me that he's learning healthy habits and will be able to maintain a healthy weight, not just gain it back as soon as he quits trying.
Meanwhile I am SO looking forward to Quinn going to preschool next year and me having a chance to get to the walking track and getting healthier. It's so hard when the kids go with me. Alone, I can exercise. With kids, I just lose my willpower.

lol...Jayson hasn't eaten that way always...it seems to come in spurts...for a few months he will be eating like I never feed him...and then it will taper off after a while. Not only that but he is very active, rides bicycle everyday.
I also tend to cook in big amounts because we eat leftovers, depending on what the food is sometimes I freeze leftovers. That and I am just plain used to cooking (we have a big exended family). I don't cook a ton of food because we eat like pigs..

My nephew is 16, and honestly the boy never ever gets full. He eats 3 times what I do, doesn;t gain any weight, and just keeps eating.....but he also does it in spurts and is really active, football, hunting, fishing, and swimming.
I also cannot seem to cook for 3 people, so we have alot of leftovers. I freeze them, or send it home with Kristin, but we do eat alot, all 3 of us.

cottage cheese and fruit for me (and whole wheat crackers & peanutbutter... salad for DH.... I eat light most nights so those nights we want to splurge or go out, I feel good about and really enjoy.

Think I will be making up some more banana bread this week. Hubby bought too many bananas last week and they started to go bad before we could eat them all, but they were great for banana bread. So I made two loaves over the weekend. He went grocery shopping that same day, and bought two bunches of bananas which I know we won't eat before they start to go bad again. I told him to check with me before buying anymore..lol I will either need to give some of it away or freeze it, I have banana bread coming out my ears. I dont' care to freeze it though because it dries it out some.

we had leftover bambi's daddy chili....the neighbor does some major hunting month long trips and brought over a few random packages of various things he has stashed in his giant game freezer. venison chili meat was the last of it until he remembers to bring more over...
