YEs, I havedone half butter, half crisco before.
Ihave switched to all crisco now-
I put in
1 1/3 crisco
2lbs powdered sugar
3 table spoons dream whip
2 or 3 tablespoons vanilla
up to 1/3 cup milk.
Beat for a while \
If you cant find dream whip, you can do
1 stick imperial
1 1/2 cup crisco
2 tablespoons vanilla
1/8 cup milk.
2lbs powdered sugar
I also add a teaspoon fll of butter flavor.
I tend to crumb coat even if I dont carve. I get a better cover that way.
My timeline is :
(for a cake due saturday)
start baking on thursday.
bake, take out, take a dishtowell and push down any dome to make it even. wait 10 minutes (no more, and I use bakers joy to spray my pans)
turn out, put on cake board to let finishin cooling- when cool cover with saran wrap put in freezer.
I'll do one or two that evening.
Early Friday, finish baking cakes, and putting in freezer- when cakes are mostly frozen I take cakes out, trim edges ( I always trim the edges) and level the cakes while frozen. I dont cut my cakes in half, I put one on top of the other. so even for a 1/4 sheet cake, I bake two 1/4 sheet cakes.
I trim then put a layer of buttercream between them, and crumb coat.
then back in the freezer for a while.
I'll take them out, put onmy buttercream get it even, clean, smooth and strait. then cover and leave on the counter.
Then decorate as I need to.
Depending on the decorations. Sometimes I will start on wend. each cake takes me over an hour to bake, and even the smallest one takes two bakings - one for each layer.
a few hours to freeze and sometimes covering with fondant or such will take me all day on Friday, so they have to be crumbcoated and set out on Thursday. So I can spend all day on friday hand painting or cutting out my fondant stencils, or piping whatever I need to.
But any cake baked on Wend will be fine well past saturday. Especially with BC or fondant on them. that seals in the moistness.
I dont refrigerate fondant. I will freeze BC on a cake. but once a cake is decorated I dont put them in the fridge or freezer.
Unless I am running behind, have a last minute order, have been busy, or everything is screwed up, I dont touch the cakes on the day of delivery.
too much chance of screwing up something and not having time to fix it.

I cover with Saran wrap before it is coole, then wrap in foil and more saran wrap and freeze while still arm, makes it SUPER moist.
I freeze overnight, and crumbcoat and frost while still frozen, makes it SO much easier, and keeps it moist., I always do it the morning or night before the party.
I am lazy, I don't do layers, and I only do half sheet or full sheet.

Erin, its because I am lazy that I do the double cake instead of cutting it in half and 'torting' with BC. plus, I aint good at a solid/strait cut. LOL
I've never tried wrapping while warm . I've just been so scared of condensation... glad to hear it doesnt hurt. It would save me time but pushing down instead of cutting off the top, has really made them more moist, and so much thicker and nicer.

I don't cut in half, I ain't filling it with anything, you get cake, cake and fristing and thats it. I cut, I don't like dense cake. It does make them moist, and they get a bit of ice, but who cares.

Part of the reason I've hesitated to use fondant is that they say you can't keep it in the fridge after you put the fondant on. Our house is old and we do get mice from time to time. I don't keep ANY food out where it'll draw mice. And I certainly wouldn't keep out a cake and then feel comfortable serving it. Chances are it would be fine but if that happened to be right when a mouse found it's way into the kitchen and to the cake I'd just die. So I keep it in the fridge until I serve it.
I sometimes layer the cakes because I do like a layer of frosting in the middle, but usually I just end up with too much cake (and too much work) if I do that.

Oh, and Trax... I just put on Betty Crocker's buttercream. If I was going to do a really professioinal decorated and fondanted cake I'd make my own so it would set up stiffer. But Betty's tastes great and that's all I care about.

Yummy....all this cake talk has got me craving cake. I am craving a big ol chunk of wedding cake...problem is no one I know is getting married..and hasn't in forever...

Kelly, the last wedding we went to was a year and a half ago - and they didn't have a wedding cake! They had scoops of ice cream and toppings. I passed.

A few weeks ago, I went to a baby shower. I was so bitter that they never served the cake! They went to lots of trouble to make a special cake with a duckie shaped top tier even. They talked about it, but never cut it. When I left, the mother and grandmother of the pg girl had both gone already, as well as close to half the party. I felt petty, but I was bitter for a few days thinking about the cake that got away, so to speak. Then I whined about it to my sister and she reminded me that I upset that they never served the cake at their wedding either. She was right. They cut a piece and took pics, but never served it before we left. She said I should remember to never expect cake at those people's parties. True, but I still want my cake!!!

I do not think I have seen Betty Crocker Buttercream here. Can you use that buttercream in a bag and decorate? All I can purchase here is tub frosting, Duncan Hines/Betty Crocker (on sale, it has to be). I shall check BC on line and see if it is available in Canada. Lord knows, that website is not Canadian friendly when it comes to coupons.

What the hell were they doing with it? It's not like you could take i back to the store and get your money back. And they couldn't save it long either. The cake would just get stale.
Trax, you CAN decorate with the BC buttercream frosting. But like all store frostings it's got more oil (to make it creamy) so it won't set up stiff like bakery icing. I don't mind since I mostly choose it for the taste. But if you want it stiffer, add some powdered sugar to it. I like the taste so much I just leave it alone and let my decorations be less crisp and exact. For me, cake is about the taste, LOL!

No fair! If you brought a gift you get cake - it's a given. That is so rude, and they did it at the actual wedding, too?
If anyone reads any of the Stephanie Plum novels by Janet Evanovich...Stephanie loves birthday cake and always has a frozen cake in her freezer for emotional emergencies. Doesn't matter if it says Happy Birthday Stanley or something on it, she'll buy mistakes for cheap just to have it. I feel like I want to get a wedding cake made for "I need Cake" emergencies!

Oh, and I forgot to mention...we had several graduation parties to attend last weekend. At one of them, an elderly woman was leaning over and looking at the untouched cake and said quite loudly "Am I going to have to be the one who cuts that cake??"
It got cut right away after she said that!

I have a friend who got divorced 6 months after the wedding. I have their cake top[ in my freezer, and I have been given the go ahead, but I have to wait until their first anniversary day, we are gonna share it and take pics, and this is/was GOOD cake too

I actually have a cake in the oven right now. Caly want's to do one for her favorite teacher and Friday is the last day of school. I've put it off twice but I can't put it off any longer, LOL!
And next week I have to make Zaven's cake. I haven't decided what I'm doing with it. I don't want just a basic cake, but I keep changing my mind about exactly what I do want.

Well, I opened my big mouth on FB about craving wedding cake and a relative of mine said she was in the mood for wedding cake too. She made some last year about this time because the girls at her work were craving wedding cake. She messaged me on FB telling me to give her my phone # she baked one and she's bringing me some tomorrow...lol

I did bring a very nice gift to both the wedding and the shower. In both cases, the mother of the groom made the cake. They looked very nice too. I have no clue how the shower ended, if they ever cut it. At the wedding though, I went home with our dd and my dh stayed later. He said they did cut the cake eventually, but it was very late by then and most people were gone. Then to make me feel better, he said he didn't bring me any because it wasn't good. I laugh at that though because I am sure he never had any as he is not a cake lover unless it is chocolate with chocolate icing.

Pat made the cake last night and brought it by today..I had a small piece earlier and oh boy it was delicious! I haven't had wedding cake in years and years..it really hit the spot..I am having a bigger piece after supper... and of course I suppose I will have to share...
