Have you guys tried one of these websites? You put in ingredients you have on hand and they come up with recipes you can make from them. They are pretty neat.

Here's one I got originally from a show called "Feed your Family on $99 a Week" that was on PBS. Yes, it was a few years ago, but I love this one. I won't be real specific in measurements. Mess around with the idea to fit your family's likes and appetites.

Sprinkle chicken breasts with some chili powder and brown lightly in a skillet. Don't cook them through, just get some color*. Place them in the bottom of your crockpot. Pour a can of drained, rinsed black beans and a drained can of corn on top of the chicken. Over all, pour a jar of salsa. It's great for finishing off those really large bottles of salsa that you're tired of seeing in your fridge. Cook on low for 8 hours.

When you serve this, you have options. You can serve each person a breast plus some of the veggie mix with some sour cream on top if desired, or you can shred the chicken up with a couple of forks and either mix it all together to serve it in tortillas. My guys like to mix it together, add a little sour cream and then scoop it all up with crunchy tortilla chips.

* I have also skipped the browning step and just sprinkled the chicken with some chili powder and laid them in the bottom of the crockpot. Much faster!
