Need some recipes.. Empty Need some recipes..

Looking for something different to make once in a while for dinner. I feel like I'm stuck in a rut. We don't eat much beef only a roast every once in a great while. We mostly eat chicken or pork. Looking for something without a billion ingredients and not so fancy that the kids won't eat it. Anybody have any ideas?

sorry,I fry 5 nights a week. just meat taters and veggies Smile

try chicken salad like tuna. or change the meat to pork

Boil 3 or 4 chicken breasts
shred and cut up
put in miricle whip or mayo
a little mustard
cut up a green apple
boil 3 or 4 eggs and cut them up
dill relish
salt and pepper

mix and eat. either on bread or with crackers

I do tuna fish the same way.

make frito pie cassarole.

chili
frito's
cheese.
line a 13X 9 pan with chips layer in chili then cheese and keep going.
put in oven at 350 bake till warm

BBQ chicken breasts
take breasts wrap in foil individual,
put BBQ sauce on top.

bake at 400.

white bread is fine for a bread.

smothered steak, its beef, but a little differnt.
get thin sliced round steak.
fry take out of pan.
make white gravey
make it thin, add water. put meat back in, simmer for a little while till its tender enough to cut with a fork
Gravy will thicken as it cooks.

make taters and biscuts and corn

( I mix a can of sweet corn and a can of cream corn together, drain the sweet corn)

The rest of this week I am frying chicken (taters, biscuts, corn and bacon wrapped green beans)
frying pork chops (mac and cheese and fried green maters and stir fried zuchinni or squash, greens and corn bread)
making taco's (hamburger meat, and instead of taco seasoning I cook it and then dump in lots of pace picante sauce and fry it a little, homemade tortillias fried in butter, guacamole and mexican rice)

and a roast at some point. I cheat and make the eat white bread or will make rolls sometimes..

OH for the green beans

get cut green beans, and a package of bacon some butter and brown sugar

Cut the bacon in half. get a greenbean and start wrapping the bacon around it, add a green bean, wrap a littl emore.. kinda like a cinnimon roll. stick a toothpick in it.
Put it in a cassarole dish.
do this till you fill up the cassarole dish or run out of bacon. (open a new can of green beans if you run out of them)

throw in a coupla few (usually 4) tablespoons of country crock ( I aint never used antyhing else, I know its only one molacule away from plastic, but its SOOOO good) and then put in brown sugar. kinda cover the bottom.

Cook at 400 till the top starts to llook done/brownish. flip them over.
cook till this side looks done. Not crispy done, but semi cooked.

Dump off all the butter/sugar and put back in the oven till its all done. (dont do this down the sink, it aint good for the pipes)

I swear, I made these for thanksgiving and they came out of the oven and were eaten BEFORE I could get the ham cut up.

I have NEVER had one last more than 1/2 way through the meal.

um, lets see
There is my recipe for Stuffed Zuchinni , it is posted on this board.

Keep in mind that everything I cook is HOT, I only use Red Pepper, and well, we are Cajun.
I do not eat pork, but I do sometimes cook it....

Jambalaya?

2-3 Chicken breasts ( I use boneless skinless, but whatever, you could even use Dark meat)
1 LB good smoked sausage ( NOT Ekrich) Optional
1 med bell pepper chopped
1 onion chopped
handful green onions chopped
2 Cups chicken broth
1 clove garlic
1 tsp Cayenne pepper ( optional)
Cajun Seasoning, Tony Chacheres, or Zatarains, to taste
1 Can Rotel tomatoes
2 Cups white rice, Uncooked
1 1/2 Cups water


Cook chicken breasts in bite size peices, or shredded, add sausage and cook until browned. Add veggies, and cook until tender. Add all other ingredients, Bring to a rolling boil, stir one time with fork, put lid on pot, turn down to simmer( very low fire). Cook 20 minutes, do not lift lid on pot. Add Cajun Seasoning to taste( when it is salted enough it is just right)
I serve it with a salad.

Sauce Picante

1/2 cup cooking oil
2 tbs flour
1/2 onion, chopped
1/2 cup celery, chopped
1/2 cup parsley, chopped
2 lb shrimp, peeled and deveined ( optional, I am allergic)
One 6 oz can tomato sauce
One 8 oz can tomato juice
3-4 chicken breasts OR whole cut up chicken.

Make a roux with oil and flour( or buy a dry roux already made in a jar). Add onion, celery and cook until wilted. Add Chicken and cook for another hour, stirring frequently. Add shrimp( isusing them) and cook ten more minutes. Serve over rice in soup bowls.

A wonderful website is Allrecipes. They have a specialized search where you can enter ingredients you have and get recipes using those items.

Not sure how old the kiddles are, but if they like spicy here's an easy crockpot chicken recipe that you'll just be able to remember. I got this from watching a PBS show called How to Feed your Family for $100 a week.

Sprinkle chicken breasts with chili powder and brown in pan. You don't have to cook through, just get some color on the chicken. Put into a crockpot and cover with one jar of salsa, one can of drained black beans, and one can of drained corn. Cook on low for 8 hours.

When it's done you can choose to shred the chicken and mix it all around to serve in taco shells or burrito style, using shredded cheese, shredded lettuce and/or sour cream if desired. It's totally up to you. You can control the heat by using mild, medium, or hot salsa and by varying the amount of chili powder you sprinkle on the chicken (or don't use chili powder at all).

Forgot to add t hat my husband and son prefer to eat it by just scooping it onto tortilla chips.

Here is a recipe that kids are supposed to love. However, I make it for myself all the time.

Simple Pasta:
Any amount of spaghetti, ziti, fettucini
Olive oil
Fresh garlic, minced
Parmesan, Romano (grated)
Salt to taste

Boil pasta until al dente
Drain well.
Return to pot or put in serving dish.
Drizzle with Olive Oil and toss with garlic.
Sprinkle with salt and grated cheese

Thanks, I'm gonna copy and paste these to my recipe folder and try them out. I love to cook but sometimes seems that I just get in a rut and cook the same stuff over and over. I also like to have recipes that don't call for a ton of ingredients so that I will already have most of what I need on hand. Thanks everyone

kelly do you get the food and family magazine from Kraft? If not sign up at the Kraft website-it's free. I think everything I make comes from them, simple and I don't need 6000 things to make them. I am cooking impaired, very impaired.
