Taco Soup Empty Taco Soup

My mom got this recipe out of a magazine years and years ago. I'm going to write it down from memory. It's so easy to make, so simple, nothing fancy, no skill required, and so so so good!

1 lb. ground beef
1 packet taco seasoning
1 can crushed tomatoes
1 can tomato sauce (small)
1 can kernel corn
1 can kidney beans
1 bag Fritos
Shredded cheddar cheese

Brown ground beef; drain.

Open all cans (do not drain). Dump everything together in a big pot. Heat on medium-low (simmer) for about an hour, stirring occasionally. Alternatively, you can dump everything into a crock pot, turn to low, forget about and leave on all day.

When ready, serve soup, cover individual portions with cheese (as much as you want), and a handful of Fritos.

Very easy to double and makes great leftovers.

I make a tortilla soup too.. but I make it with chicken.. actually, I assemble it.

I chop and brown chicken breast with onion and garlic..
Add two boxes of chicken broth
Add large chunky salsa
simmer
Add kidney beans
Add black beans
simmer

add grated cheese and simmer until it melts in...
I use some Velveeta, mostly hot pepper cheese.

heat through until all the cheese is melted
serve with crushed white tortilla chips on top

very similar, but chickeny,.

oh my both of those sound good. I am going to have to give them a try i think the kids would love them!

Starting this sunday I'll post a crockpot recipe a week. If anyone has any they wanna post that would be great! I love my crockpot.

I've been making this taco soup for awhile now, it's such an easy recipe, especially good if you add some cornbread on the side, or sprinkle some shredded cheddar on the top.
I found this when I was on weight watchers, trying to lose that baby weight. It's 0 points!
Just dump the following into a pot, and simmer awhile:

1 can chicken broth
1 can rotel
1 can refried beans
1 can corn, drained
1 can black beans, drained
1 packet taco seasoning

We do the taco soup, but we also add one packet of Hidden valley ranch salad dressing mix, makes it yummy!

I think #1 would be good, if you substituted the kidney for black beans. Since black beans is more of a mexican thing then kidney.

Sure, you can substitute whatever you like, make it your own, but I do guarantee that the kidney beans are really good to use too!

I'm going to try the Weight Watchers one too, thanks for posting that!
