Meatball Soup
2 (48 oz) cans chicken broth
1 lb ground beef
1 egg
1/2 cup seasoned bread crumbs
1/4 cup romano or parmesan cheese - add to mixture
1 (10 oz) pkg frozen spinach, thawed
1 (16 oz) pkg frozen tortellini
1/2 tsp salt, pepper to taste
Pour cans of broth into large soup pot; cover and heat over medium heat until simmering.
Meanwhile, mix ground beef, egg, bread crumbs, cheese and salt & pepper.
Form into 3/4 inch meatballs.
Drop into simmering broth and cook through, about 5 minutes.
Add frozen tortellini, boil another 7 minutes
Add spinach and heat a few more minutes.
Makes 6 main course servings. Sprinkle with more cheese if desired.

Shoemaker, I've been meaning to thank you for this recipe. It sounds easy and tasty and I plan on trying it soon. I just love soup in the winter months. I t hink I'll use the Barilla dried tortellini instead of the frozen, I love those and usually have them in the pantry for another dish I make.

I think I'm going to try this one tomorrow. I've been looking for recipes with soft, easily cut up meats that the dog can manage with the road rash in his mouth that my family will also eat. This sounds good enough that there might not be any leftover meatballs for the dog!
