Holiday baking? Empty Holiday baking?

OK, I have to do tons of baking for Christmas. I really would like to do some of it ahead of time. Maybe 10 days to a week ahead. WIll cookies stay fresh in airtight containers in the freezer? I have never had to store them before, but i won't have time fo rhte 3 day marathon this year.

I have baked for cookies for Christmas only to have too many left over so rather than eat or let set in tins, I've frozen them.... most do well. Heck, DH has been known to take a frozen cookie from the freezer and eaten it frozen!

So many people in my neighborhood that I've baked and given plates of cookies in past years, have moved out of state... so my baking is down to 2 families. One a plate, the other a huge bag full of... I'll be doing some breads ahead of time, as they can be frozen, candies will wait until the 21st, and one snack which is to die for, I can do just about anytime as long as it's kept in an airtight container.

I'm watching my calendar as I can't let everything go until the last week... we have nephew/family coming the 18th, then the 26th, leaving for St. Louis...

timing is everything!

Good question Erin, I don't know but was wondering the same thing. I hate waiting until I'm rushed to do them.

I freeze the cookies I bake in ziplock bags, what is really good is you can make quick ice cream sandwiches out of the frozen cookies. One scoop of ice cream, two cookies - smack you got it! Kids love them when rolled in sprinkles or chocolate shavings.

I am hoping if I cool them completely, and put in ziplocs or tupperware they will stay good. If I don't freeze and hie them they will get eaten. I have been saving a box that is clearly labeled " CREAMED ASPARAGUS" for this occasion.

If interested, let me know and I'll send you the recipe... includes bugles, cheese nips, crackers, pretzles, ranch dressing., nuts (maybe some other stuff?) .. make a huge amount and keeps for a long time. Better than the chex mix snack mix.
