Chicken Salad Empty Chicken Salad

I had the best chicken salad the other day and I'm not sure how the people made it. I asked the waiter for the recipe and of course he said no. It's a small family run business. Anyway, in the chicken salad I tasted chicken (lol), mayo, small grapes, and some type of nuts. It was to die for. Do any of you have a really good chicken salad? I'm having a play group over on Wed. and thought about making some. I'd buy some from the place, but it's $10. per lb. They think highly of it! Thanks!

I make mine a variety of ways, but here goes

1 whole chicken OR 4 chicken breasts, cooked ( I bake it, but you could boil it) and deboned
1 C chopped celery
1/4 Cup chopped green onions
1/2 cup green grapes, cut in 1/4's
1/2 cup craisins ( dried cranberries
1/2 cup pecans, walnuts, or almonds, chopped
Mayo, just mix it in til it's right
salt and pepper to taste.

I love to put apples in mine.....

I get the best chicken salad at costco's it sounds very similar to that recipe and it is great.

Red Lobster does a to die for Apple Walnut Chicken salad (with greens though - doesn't sound like the one you had did, nor does Edbson's recipe). These are the ingredients as listed on their menu: Field greens, warm grilled chicken, red bell peppers, sun-dried tomatoes, apples, toasted walnuts and blue cheese with balsamic vinaigrette. I've got company coming in this weekend and I'm going to try my own version of it and think I'll use pecans instead of walnuts.
