Zucchini Boats ( stuffed Zucchini)
1 1/2 lbs Zucchini ( about 3-4)
1 C breadcrumbs
1/2 C chopped Bell Pepper
2 Chicken breasts, cooked and shredded
1/2 C cheese ( I used Mozzarella and Provolone, but the kind is up to you)
1/2 tsp Salt,
1 tsp red pepper( optional, or use black pepper)
1 med Jalapeno( optional)
Boil water and cook Zucchini about 5 minutes, remove insude, and keep skins to form "boats"
mix all ingredients together, and stuff in boats, back 30 minutes at 350.

Sounds good- thanks for posting it. I cannot wait until I have fresh zucchini from my garden. I am always looking for recipes for something other than the traditional standby- zucchini bread.

I made this today, but I used hamburger meat instead and just threw in Tony Cacheries (Sp). I also left out the bell peppers (yuck) and enjoyed it
Of course my zuchinis were so big only one would fit in a 13X9 pan.

yum. I barely ever check this board. I am so not a cook and I figure the chances of you guys all getting into a knock down drag out over bread pudding are mild. I'm glad I did, this sounds delicious AND EASY!!!, of course being up here I have a while before my zucchini are ready. Thanks

Yeah, I made it with some of my homegrown ones, and they were 4 pounders......kinda made alot.

you poor thing tara! heck, we have done put up all the squash. I hope... I think its about played out. really getting started doing the maters this week. I have been frying them and just eating them whole for a few weeks now.
Hot peppers and bell are coming in pretty heavy as are the cukes.
