I am going to bake cookies on tuesday. i was just wondering if anyone has a favorite one to share with me. I have to make peanut butter with the kisses on the top for my daughter, chocolate chip for my husband. just looking for something new and fun to make for me. thanks

I decided to try all new recipes this year. I made Orange Juice Balls that I saw a woman on The Today Show make. It was part of a segment on Hand-me-down recipes. Very easy:

Orange Juice Balls

1 Box Nilla Wafers, chopped up in food processor or blender
1 stick melted butter
1 6-oz can frozen OJ
3/4 box powdered sugar

Mix everything together and form into balls. Then you can either roll the balls in powdered sugar, chopped nuts, or coconut. I dipped some in each topping. Tasty and no baking!

When I have more time I'll post the other ones I made.

Gingerbread Whoopie Pies
I used my own filling recipe for these, the same filling I use when I make
Pumpkin Whoopie Pies. If you want the original filling recipe let me know and I'll look it up. These are chewy and yummy with a strong gingerbread flavor.

cookie recipe Whoopi10

Cookies
3 C. Flour
2 t. ground ginger
1 t. ground cinnamon
1 t. baking soda
1/4 t. ground nutmeg
1/4 t. salt
1/2 C. molasses
1 egg
3/4 C. brown sugar
3/4 C. butter
1/4 C granulated sugar (for rolling balls in)


Mix flour, ginger, cinnamon, baking soda, nutmeg and salt. Beat butter and brown s ugar in large bowl of electric mixer until light and fluffy. Add molasses and egg and beat well. Gradually beat in flour mixture until well mixed. Press dough into a thick, flat disk, wrap in plastic wrap and refrigerate 4 hours or overnight.

Shape balls into balls (they say 1 inch, I do them smaller and got just a couple cookies over 3 dozen when sandwiched together with the filling) and roll in granulated sugar. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 8-10 min, or just until edges begin to brown. Remove to wire racks to cool completely.


Filling:
1 egg white -- beaten
2 tablespoons milk
1 teaspoon vanilla
2 cups confectioners sugar
3/4 cup vegetable shortening
Combine egg white, milk, vanilla and 1 C. confectioners sugar. Beat well. Add 1 more cup confectioners sugar and shortening. Beat until smooth and
spreadable.

Sandwich 2 cookies together with the filling and roll the exposed edges of the filling into crushed candy canes.

Cranberry Shortbread

Photo on page 136 Ladies' Home Journal (Dec Issue)

Ingredients
2/3 cup dried, unsweetened cranberries
3/4 cup confectioners' sugar
1 cup unsalted butter, softened
1 tsp vanilla extract
1/4 tsp salt
2 cups all-purpose flour
2 oz white chocolate, melted, cooled slightly
Crystal sugar

Directions
1. Heat oven to 325 degrees F. Line a 9-by-9-inch pan with a strip of foil or parchment, allowing edges to hang over opposite sides.

2. In a food processor, blend cranberries and confectioners' sugar until cranberries are finely chopped; transfer to a mixing bowl. Blend butter into cranberry mixture until smooth, then add vanilla and salt. Stir in flour until completely combined.

3. Press dough evenly into lined pan. Bake until firm and pale brown, about 30 min. Let cool in pan about 10 min.

4. Run a knife around the edges and lift shortbread from the pan using the parchment overhang. Gently score shortbread into 12 4-inch or 18 3-inch triangles and let cool completely. Cut cookies following score marks. (To make 18 triangles: Score shortbread into 9 squares, then gently score across each square from one corner to another, forming 2 triangles from each of the 9 squares. There will be 18 triangles per 8-inch pan. I made 2 pans at once, a total of 36 shortbread cookies.)

5. Place melted chocolate in a plastic bag, snip off a small corner and drizzle chocolate over cookies. Sprinkle with crystal sugar and tap off excess. Allow to set 30 min. Store airtight for up to 5 days. Makes 12 to 18 bars.

Not really a cookie, but super easy and GOOD!

1 bag semi sweet chocolate chips
1 can mixed nuts( or peanuts)
Put in crockpot on,low for 1 hour, stir, drop on waxed paper,

We do a simple sugar cookie (usually from a Betty Crocker cookie mix) and crush up candy canes to put in them. Very yummy and cruchy, and kind of holiday-esque.

These are really delicious and every time I make them someone asks for the recipe

White Chocolate Orange Cookies (oven temp 375)

1 stick butter room temp (it tastes best with real butter, but you can use margarine)
1 cup sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
grated orange zest of 1 orange
10 oz white chocolate (vanilla chips) (a full bag is a bit too much about 2/3 of a bag is perfect)





Mix sugar, butter, egg and vanilla together well. Add dry ingredients mix into a dough..add orange zest and chips mix well. Take a teaspoon of dough and roll into a ball and flatten slightly before placing on the cooking sheet. This makes about 20- 24 cookies. Bake 8 minutes..let cool...enjoy! Ever since trying this recipe...these are my families favorite cookies.

Not a cookie, but equally as good to share

Almost Turtles

1 bag of Rollo Chocolate Caramels
56/57 mini pretzels or pretzel squares
pecan halves

heat over to 250
tin foil on cookie sheet
lay pretzels and place one Rollo on each

bake for a scant 3 minutes (soften, not melted)

press a pecan half into each... cool... for several hours before packing

they taste very much like a turtle!

makes 56-57.
