Fun Kids' Cupcakes
I didn't think this was anything too special until yesterday. It was Sam's birthday and it was one of our t-ball nights. In order to make it a bit special for him I baked birthday cupcakes inside flat bottomed ice cream cones. You just fill each cone about 3/4 full of batter and bake them like you normally would. We put vanilla icing and sprinkles on top so the finished product really did look like ice cream cones. The kids loved them and best of all there was no garbage to clean up off the ball diamond!

My oven runs a bit hot so I dropped the temp by 25 degrees (farenheit) from the package directions. I baked them for about 20 minutes on a cookie sheet. The bottoms sometimes dry out when I do them this way, but this batch turned out very nicely. Sam had picked a Duncan Hines cherry chip mix for it. I very, very rarely make cake from scratch!

BTW, I have no talent for cake decorating at all so you know that if I can make them look cute you can too!
