Kelly, if I may be so bold, do you have a great recipe that you use for icing your cakes? I like making my own but haven't found the Holy Grail of Buttercream recipe just yet. I'm a buttercream lover and I can't stand to see people scrape it off their cake and then just leave it there!

I didn't do it! It wasn't me! Ohh, what? A buttercream recipe you say, whew..! Lori it depends, if I don't have a lot of time I cheat and buy canned frosting. I have tried different buttercream recipes and out of the ones I have tried I can give you the one I use, I still keep trying others though hoping to acheive perfection. This recipe is not my own I borrowed it from AgentCakeBaker on Cake Central:

Buttercream Dream

Serves/Yields:
Prep. Time: 7-10 min
Cook Time:
Category: Frostings
Difficulty: Easy


This recipe was made from trial and error. I made two mixtures of buttercream. One with salted butter which was too buttery (salty) and one with unsalted butter which was still too sweet. So I combined the two and it became the best buttercream I've ever tasted. I use this recipe for all of my cake orders and it is a hit every time!!!

1 stick butter (unsalted)
1 stick butter (salted)
1 cup shortening
2lb bag of confectioner's sugar
3 teaspoons clear vanilla extract
5-6 tablespoons of milk (cold)

Cream butter and shortening. Add clear vanilla extract then add confectioner's sugar. Allow confectioner's sugar to blend well then add milk. For thinner consistency, add more than 6 tablespoons of milk.

I use the same recipe, but I add a Tsp( or a TBSP) of butter flavoring, and i have to say I make the best frosting I know of....LOl I add water instead of milk too, and it hardens quite well...good for roses and stuff......not that I make those, but it would be good for them...

I'm gonna have to try yours Erin, I am always looking for better than what I have lol. If I like it better then I will chuck the recipe I use and go with it. Smile

Thanks Kelly (and Erin, now, too). I'll try this out the next time. I have used the combo of butter and shortening, but never the combo of salted and unsalted butter. I think I have butter flavoring, too.
