OK, It's not quite round
DH's brother from TX is visiting, so we've been going over to the In-Laws' every evening this week to help make, serve, & clean up dinner. He brought 3 friends, and they're always famished after they get in from ice fishing. Today was my day to bring dessert, so I made this fruit pizza. It was gorgeously round until I baked the crust...it grew off of the pan in spots.

It is good, Tara. I called my MIL and asked which she would prefer - the fruit pizza or cheesecake - and she chose this immediately. It's great in the summer, but it sure brightens things up in the winter, too.

Well, I was in the checkout line before I remembered that I should have bought a few kiwi fruit. The green really adds nice color. It's not always quite so red, white & blue.

Fresh Fruit Pizza with Citrus Glaze
For the cookie base:
Use 2-3 packages of refrigerated sugar cookie dough. My big 16 inch pan needs 3.
First, line your pizza pan with parchement paper, then spread the cookie dough evenly over the pan, spreading to within about a half inch or inch of the edge. Bake at 350 until slightly browned - it firms up a little after baking. It will take longer than the stated time on the cookie dough. I had mine in an extra 10 minutes.
Cream Cheese "sauce"
8 ounces cream cheese, softened
3/4 teaspoon vanilla extract
6 tablespoons granulated sugar
Fresh Fruit Topping:
Any combination of sliced Bananas, Strawberries, Kiwi, Blackberries, Raspberries, or Blueberries. Start at the outer edge of the pizza and work your way to the center. You can overlap slightly, if you want to.
Citrus Glaze:
6 T. water
1/2 cup fresh orange juice
4.5 tsp. Cornstarch
1/2 C. Sugar
3 T. lemon juice
Combine all ingredients in a small saucepan. Cook over medium heat until it starts to thicken. Remove from the heat and cool slightly. Using a pastry brush, gently brush the fruit with the glaze.
