Truffles Empty Truffles

When I was in high school a friend of mine made truffles and they were yumMy! Well i was trying to figure out what to make with a half full bag of mini toll house Choco chips. I remembered my friends truffles and dug up this recipe. I was amazed at how great they turned out and how fancy they look! ( great gift idea if put in tins!)

6 oz semisweet baking choco ( I used toll house chips not sure if semisweet)
10 tbs softened butter
2 tsp vanilla extract
1 1/2 c confectioners
2 beaten egg yolks
Things to roll ball in for coating:
Baking cocoa. ( used to coat outside afterwards but I found it too bitter)
I used powder chocolate milk mix instead
Finely Crushed cookies ( Oreos or I used thin mints)
Anything that you like
Makes about 30-35 balls
1. Melt Choco chips in saucepan on low heat stirring constantly. Let cool.
2. Cream butter with egg yolks in bowl
3. Add conf. Suger gradually to above mixture blending well.
4. Stir in Choco and vanilla into above mixture
5. Chill till firm enough to handle
6. Shape into balls. Then either leave plain or roll in choice of coatings. Can also drizzle white chocolate onto.

Sounds good. They could be rolled in nuts or toasted coconut, too.
