Whipped Cream Frosting Empty Whipped Cream Frosting

I am making the hub a birthday cake. A white cake, four layers - filled with lemon pie filling. Frosting is whipped cream. How much corn starch should I add to stiffen the whipped cream up? I have not done that before.

Corn starch around here is not measured. But I have a high humidity- sometimes I need more, sometimes less- its just one of those things you have to add a bit and check... or at least for me it is... Sorry Sad I know thats not an answer, but its all I know Smile

I've never ever heard of adding cornstarch to whipped cream. Exclamation

I sweeten mine with confectioner's sugar. It has a bit of corn starch in it and it seems to be enough to stabilize it for me.

That is a good idea using confectioners sugar, I shall give that a try. Thank you.

another trick is to soak some miniature marshmallows in the cream overnight before whipping- not sure of the amount, but the gelatin in them helps stabilize the cream when whipped- also sweetens it some.

The cake turned out beautiful. Beautiful from the heart, my husband loves it. It was so darn good, I have had it for breakfast and as a dessert. Thanks for all the suggestions, much appreciated.

Thank you and thank you for the birthday wishes. We are having a feast of bbq chicken with homemade teriyaki sauce, homemade potatoe salad, and of course, the cake!
